So I've read in a couple of places where some of the events of
Countdown are not actually supposed to have happened (or, at least, not to have happened as portrayed therein). Is this so? And
if so, where do I go to find out what still applies and what doesn't?

Well...if you're reading Final Crises, then just throw everything you read in Countdown out of the window, because it doesn't really apply. Same thing if you read Death of the New Gods. I'm quite happy to delete both Countdown and New Gods from my brain, and just go with what Grant Morrison is dishing out in Final Crises.
It just makes my life easier.
